Quilt Camp 2013

Quilt Camp 2013 started out with a rousing game of "strips" poker. Karen and Sandy were our big winners. After a great dinner we started the mystery quilt with the first block. We enjoyed a camp filled with mystery blocks, new projects, great demos, good food and new friends. We ended with our traditional Sunday brunch and show and tell. A fun and busy time was had by all, we hope you can join us next year.

Our favorite recipes:

Lemon Pork Chops, this is from Taste of Home

  • 4 bone-in pork chops, 7 oz each
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 1 medium onion, thinly sliced
  • 1 medium lemon, thinly sliced
  • ¼ c. packed brown sugar
  • ¼ c. ketsup
  • Place the pork chops in a 3 qt. slow cooker. Sprinkle with salt and pepper. Top with onion and lemon. Sprinkle with brown sugar; drizzle with ketsup. Cover and cook on low for 6 - 8 hours or until meat is tender.

Baked Eggs

  • 4 6" flour tortillas
  • 1 pkg (8oz) frozen chopped spinach, thawed
  • 2 tsp. olive oil
  • 1 cup sliced mushrooms
  • ½ medium red bell pepper, thinly sliced
  • 4 Tbs. chopped scallions
  • 1 tsp. salt
  • 4 large eggs
  • 4 tsp. shredded Parmesan
  • ½ cup salsa
  • Heat oven to 375. Coat inside of four cups of standard muffin tin with canola oil cooking spray. Press a tortilla into each cup and set aside. (If the tortillas are a little stiff, heat them in the microwave for 10 seconds).

    Squeeze the moisture out of the thawed spinach by placing it in a clean towel and pressing to absorb the liquid. Set aside

    Saute mushrooms until tender, add peppers and scallions and saute about 5 to 7 minutes more. Add spinach and salt and stir to mix. Remove vegetables from the heat.

    Divide the vegetable mixture among the four tortilla cups. Break an egg on top of each vegetable portion and top with a teaspon of the Parmeasan. Bake until eggs have set and the cheese is melted, 25 to 30 minutes.

    Place each egg cup on a plate and top with a tablespoon of salsa.
